Sweet car! But of course I'm biased... I remember speaking to a guy at a Spring Fling in Los Angeles about 2 years ago. He had been collecting rolls of old fabric, vinyl top materials, carpet etc for years. What caught my attention was the awesome gator and paisley material he had. The original stuff, not re-pop. I no longer have his contact info, but if I remember correctly, he was up in the NW, Oregon, I think. It might just be the start of a google search, but hope this helps. The other thing I might suggest is to find some of the oldest upholstery shops in the phone book. Some of those places have all kinds of stuff that's been out of style for 30 years. You never know. I dunno. . . I always likes the exterior of the 68 VIP. The interiors were the same. The Slab side was quite a design. Made the car look bigger than it really is.
