I would say 4.11 max gear and a 3500 stall would get you real close.You are moving very well for 3.23 gears at your weight. Maybe even try a 3.73 gear if you are rpm limited at the top end.

Shift at 5500 first run, shifted at 5800 second run, and let the automatic shift at 5100 on the third run. I didnt notice what I was going thru the traps at. I am certainly not near 5000 thru the traps though. I just want to say it went 11.99 once, so i would like to try a lower ratio. I like the 3:23's around town and may even put back in the 2:73's.

I do not believe you have enough hp for the weight to get you to 11.99. If you fully port those heads you would.
You are now probably going through the traps around 4500 +/-200 rpm - my best guess. For best ET I would say 4.30's would put you through the traps around 112 mph at 6000 rpm at 11.99 seconds if you have enough hp. That would be an optimized gear.
But you really have to be careful with those hydraulic rollers. They hate rpm and its a balance of spring pressure versus valve float versus killing the rollers. I am struggling with a very similar cam as yours but a Lunati. Only 2 runs and half the valve lash was WAY loose! We are suspecting valve float cause I know I set them right. This was a 4000 lb car and went 13.3 at 101.75 mph. Your motor is better than this one was. However those 906 heads went 10.89 @ 123 mph in 3450 lb race trim with a .590 cam, 30 inch tires, 4.56 gears and lots of compression.
Doubt your cam would spin past 6000 rpms. If you had 4.56 gears with those tires running 11's you would be exceeding 6000 rpm.
Your suspension appears to be working pretty well. But to get that tub moving you need torque. That means you need more than 2800 rpm stall. You need at least 3500 and probably closer to 4000 stall to optimize it.
I understand the need for low et's (been chasing a 9.50 run for 10 years - best 9.61). Someday I will get there.
But for you I would enjoy it as a solid 12 second car and go with it. Or you need to commit to some more serious mods in head porting/gears/converter/tires/etc. Of course you might surprise me and get there without head porting but my gut feel is you wouldn't.
