I want to put on wider tires and larger wheels (not any larger than 17 but 15 would be fine). Does anyone know what the largest tire size with what offset on the wheels i can go front and rear.

No idea on the front, I'm a fan of the big and little camp...
Personally I've had 295/50/15's on a 8" rim with 4.5" of bs will fit on mine.
If you want something taller, 275/60/15's on the same rim will do it aswell.
4.5 bs with an 8" rim seems to be about perfect, if you want to step up a 16 or 17" rim, start with those dimensions and fint a tire thats gonna get you the same height as say the 275/60, approx 28" tall by 11" wide.
I know it's not a 66, but it'll give you an idea, perhaps. Here's a pic of my 68 SF with a 275/60-15 on a 15x7 Cop wheel:
Backspace on the cop wheel is between 4.125 and 4.25", and a 7" wheel is a little small for the 275 tire, but IMHO it still looks OK. An 8" wheel would be better. Keeping the same offset by adding 1/2" to each side of the wheel, the backspace would be between 4.625 and 4.75", so I'd guess it's safe to say that a wheel with 4.5-4.75" of backspace would work fine. At least on my 68 SF... At some point the tires will hit the strut rod on tight turns, but I'm not exactly sure what that point is, as my strut rods are tweaked outwards.
I didn't try this setup on the rear, although I'm pretty sure it would fit OK. Measure twice, cut once...
